Documentarista is an epicene noun — the form is identical for men and women, distinguished only by the article: il documentarista (m), la documentarista (f). The plural is i documentaristi (m/mixed) and le documentariste (f). It refers specifically to someone who makes documentary films, not a journalist or archivist.
