Berlinese is both a noun (a person from Berlin) and an invariable adjective (l'accento berlinese, the Berlin accent). Like most Italian adjectives ending in -ese, it does not change for gender: un berlinese, una berlinese. The seed gender is blank because it varies with the referent.
