Bolognese is invariable for gender as an adjective (il ragù bolognese, la salsa bolognese); the plural is bolognesi (i tortellini bolognesi). As a noun, un bolognese / una bolognese means a person from Bologna. Internationally the word is best known for ragù alla bolognese, the slow-cooked meat sauce — in Italy simply called ragù.
