Inibitorio is a formal or legal/medical adjective — ingiunzione inibitoria ('injunction / restraining order') in law, or effetto inibitorio ('inhibitory effect') in pharmacology and neuroscience. It rarely appears in everyday informal speech; in conversation Italians would more naturally say che blocca or proibitivo. The feminine is inibitoria, plural inibitori/inibitorie.
