Specialità is invariable — the plural form is also specialità. It is used both for a culinary specialty (la specialità della casa — 'the house specialty') and a professional field (la sua specialità è la cardiologia — 'her specialty is cardiology'). The accent on the final syllable is obligatory in writing.
