Ufficiale can also function as a noun meaning 'an officer' (military or police), so un ufficiale dell'esercito means 'an army officer.' As an adjective it follows the noun it modifies: documento ufficiale ('official document'). Note the double 'f' and the 'c' before 'i' gives a 'ch' sound.
