Stimato functions both as an adjective (un medico stimato, a respected doctor) and as the past participle of stimare (to esteem, to estimate). In formal letters, Stimato professore or Stimata dottoressa is the Italian equivalent of 'Dear Professor' — a slightly more formal register than Caro/Cara.
