Porcino (Boletus edulis) is the prized wild mushroom of Italian cuisine, used in risotto, pasta, and sauces. The name literally means 'piglet-like' from porco (pig). Often found at markets in autumn; sold fresh, dried (porcini secchi), or preserved in oil.
